Green tea leaves are harvested and not allowed to oxidized like black teas. They are know to be delicate, fresh and clean in taste. They can produce a grassy and earthy taste that is refreshing cold or hot. The trick to making a delicious cup of green tea is to make sure your water is not too hot (boil and let it cool down) and that you don’t steep your tea longer than 2 mins. If you find that you tea is bitter then you have either  over-steeped the tea or your water was too hot and you scorched the leaves.
